Yu Bu Cho Bap (Tofu Wrapped Rice Balls)

Ingredients:
1 bag of Inari (Each bag contains 4 packets, and each packet contains 4 tofu skins)
2 cups of cooked white rice

Version 1:
1 Onion
1 Small Potato
1 Carrot
1 tbsp Sesame Oil
1 tbsp Sesame Seeds
Pinch of Salt

Dice vegetables into very small pieces and quickly stir on high heat in frying pan. Add a cup of cooked white rice and mix thoroughly with sesame oil, sesame seeds, and salt.
Set aside for 2 minutes. Squeeze out the juices from the Inari pouches. Scoop gently with your spoon and tuck neatly into the tofu skins. Be very careful not to rip the inari!

Version 2:
Wasabi Rice Seasoning
1 tbsp Sesame Oil
Optional: Unseasoned strips of nori

Mix in 1 cup of cooked white rice with a good heapful of rice seasoning and mix with sesame oil.
Set aside for 2 minutes. Squeeze out the juices from the Inari pouches. Scoop gently with your spoon and tuck neatly into the tofu skins. Be very careful not to rip the inari!
Fold a piece of nori over the inarizushi/cho bap if desired.

Serve and enjoy.
